A handful (about 120g) of uncooked basmati rice
A thumb sized piece of ginger, minced
One medium chilli, sliced
30g of fresh coriander, roughly chopped.
A handful of mint leaves.
A handful of beansprouts.
The zest and juice of a lime
Teaspoon of fish sauce.
Teaspoon of toasted sesame oil
Mince up the ginger and fry in a saucepan on a low-heat with some olive oil. Keep the heat low as you’re flavouring the oil, after a couple of minutes throw in your chilli and again keep the heat low. When both the chilli and ginger have softened, throw in your chicken stock and bring to the boil. Once that’s boiling, throw in your rice and reduce the heat. Let that simmer away until the rice is cooked.
Once the rice is cooked, add your fish sauce, coriander, mint leaves, lime juice, and sesame oil. Pour it into a big bowl and garnish with lime zest and beansprouts. Get your head over it and breath the vapors in deep to your lungs to help your cold. Enjoy and show that cold who's boss.
